Keele Family Go-to dinners

In a big family, it can be hard to find time to eat dinner together. Our family has always had dance practices, church meetings, animals to feed, chores to do and not enough spare time. Growing up, my mom always made an effort to have a home-cooked meal for us every night. Some nights were busier than others. So how did she manage the busy schedule with dinner time? Here are a few of our favorite meals and how we enjoyed them. 

The first meal I think of when I think about family dinner is spaghetti. It was always such a quick, tasty meal that everyone loved. We would always try to think of ways to make spaghetti unique and different. In the fall, we would add fresh zucchini and put the yummy sauce over spaghetti squash. We would switch up our noodles and even add ricotta cheese on the top to make it lasagna style. The unique options you can make with spaghetti are endless. 

The nest meal I think of is Chicken Broccoli Rice casserole. It sounds exactly how it is made. My mom would put some rice in the rice cooker, steam some broccoli, and cook the chicken. She would then mix up this yummy, creamy sauce, and combine all ingredients with a cheese topping. This was one of our ultimate comfort food options a tour house. It is quick, easy, and delicious! 

Chicken Noodle Soup! We love chicken noodle soup at the Keele home. We used to eat a rotisserie chicken one night and mom would make homemade chicken broth with the leftovers for soup the next day. I remember walking in from school and smelling the delicious smell of chicken broth. My mouth is watering just thinking about it. 

TACOS! Tacos are always an appropriate dinner. You can make them in so many different ways and they are so fast. We have street tacos, chicken tacos, deep fried tacos, taco salad… The list goes on and on. If we feel like being healthy, we use turkey sausage, if we don’t, we add all the cheese, sour cream and anything else you can think to put on a taco. 

These meals might be simple, but they are delicious and make me think of home. Our family loves good food and spending time together. What are some of your families favorite go-to dinners?
